The Bean Pie is a highly nutritious treat that Muslims in Amerikkka have been eating for at least 80 years now. The other day, I had a hankerin’ for one and decided to make it. The NOI dietarty requirements laws allow for dairy, but my own don’t, so I decided to try to make a vegan pie. I will put non vegan ingredients in parenthesis. Below are the ingredients:
2 cups (or one lb) cooked navy beans
4 Ripe Bananas (or 4 eggs)
1 Pt of almond milk (unsweetened if sweetened, use less sugar)
8 tablespoons of earth balance (or one stick of regular butter)
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon of ginger powder
2 Tablesppons flour
2 cups sugar (brown or white, we used brown)
2 Tablespoons vanilla extract
1 crock pot
1 large mixing bowl
Oven pre-heated to 450 degrees.
So 2 days before I soaked the beans and put them in the fridge. Soaking the beans allows the gas causing agent in the bean to be separated. After, I rinsed the beans, and put them in the crock pot at around 7PM. I then forgot about them and fell asleep a couple hours later. Waking up in the morning at 5 AM, I remembered the beans were cooking! I rushed to the kitchen to see that they were sitting in the crock pot completely soft, and ready to go. Now, one only really needs to leave the beans in the crock pot for a few hours, I left it in there for around 10! They were very soft, but that’s good for bean pies, as we’re going to smash them up anyway.
Afterwards, I crushed up the beans with a whisk and then started to mix the other ingredients in a blender. After all that was mixed up, I combined the two and wisked them for a few minutes and put them in the oven at 450 degrees for 15 minutes. Then turned down the oven to 350, and left it in there for 35 minutes.
After, I took it out and let it cool. You can also put it in the fridge for 10 minutes if you want that joint post haste.
